Dining aboard Aqua Mare

Cuisine is one of Aqua Mare's defining features. Award-winning Peruvian chef Pedro Miguel Schiaffino has created menus inspired by the landscapes and ingredients of Ecuador and the Galapagos, combining local produce with Japanese techniques and Peruvian influences.

Ingredients are sourced with an emphasis on sustainability and supporting local farmers, fishermen and producers. Dishes may include tuna crudo, shrimp ceviche, barbecued plantain and Ecuadorian-inspired specialities, accompanied by a curated wine list focused on South American vineyards. Vegetarian, vegan, gluten-free and other dietary requirements can also be accommodated.
